At least once every 10 days, I make a whole chicken (or two small ones) in the slow cooker with this seasoning salt on top. Then with the leftover chicken, I can make multiple lunches for my whole family. This is one of my favorites because the avocado makes it so velvety smooth and satisfying. Add a tablespoon of toasted pecans and grape tomatoes for extra flavor and crunch.
Avocado Chicken Salad
This 3-ingredient salad couldn't be easier, but it's very satisfying!
Ingredients
- 1 cup chicken cooked and shredded
- 1/2 medium avocado mashed
- salt to taste
- pepper to taste
Instructions
- Combine above and eat immediately (to prevent browning), wrapped in Bibb lettuce.
Notes
Mix in diced apple and carrots, or grape tomatoes and toasted nuts if desired.
