Avocado Chicken Salad

At least once every 10 days, I make a whole chicken (or two small ones)  in the slow cooker with this seasoning salt on top. Then with the leftover chicken, I can make multiple lunches for my whole family. This is one of my favorites because the avocado makes it so velvety smooth and satisfying. Add a tablespoon of toasted pecans and grape tomatoes for extra flavor and crunch.

Avocado Chicken Salad

  • 1 cup of chicken, cooked and shredded
  • 1/2 avocado, mashed
  • salt, to taste
  • pepper, to taste


Combine above and eat immediately (to prevent browning), wrapped in Bibb lettuce.
