Special Occasion Blondies

These blondies are a special treat in our family! We don't make them often because they use refined flour and sugar, but they are always well received when we do make them!

Ingredients
  

  • 1 stick butter melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350.
  • Melt butter in medium-size microwavable bowl. Beat in brown sugar until dissolved.
  • Add egg and vanilla. Mix well.
  • Add salt and stir in flour until combined.
  • Stir in chocolate chips.
  • Pour into greased 8 x 8 pan. Bake for about 30-45 minutes; checking often after 30 minutes because ovens vary. (Can be doubled and cooked in a 9 x 13 inch pan; they will need more time to be cooked through in center.)

Notes

These are the easiest homemade baked dessert (you probably have the ingredients on hand) to make for your own family, a potluck party, or a meal train dessert. They aren't "health food" per se, but at least they are made from scratch; we reserve them for special occasions a couple times a year.
 
While living in Italy, it became our tradition to double this recipe to make a cookie cake with "Ciao!" written in icing as a going-away treat for friends. I love that these blondies are crowd-pleasing and appropriate for any special gathering, especially among military friends--after all "ciao" means "hi" and "bye" and we are always coming and going!
