Special Occasion Blondies

While living in Italy, it became our tradition to double this recipe to make a cookie cake with “Ciao!” written in icing as a going-away treat for friends. I love that these blondies are crowd-pleasing and appropriate for any gathering, especially among military friends–after all “ciao” means “hi” and “bye”!


  • 1 stick butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 t. vanilla
  • 1/2 t. salt
  • 1 cup all-purpose flour
  • 1 cup dark chocolate chips


  1. Preheat oven to 350.
  2. Melt butter. Beat in brown sugar until dissolved.
  3. Add egg and vanilla. Mix well.
  4. Add salt and stir in flour until combined.
  5. Stir in mix-ins.
  6. Pour into greased 8 x 8 pan. Bake for about 45-50 minutes; checking after 30 minutes because ovens vary. (Can be doubled and cooked in a 9 x 13 inch pan; they will need more time to be cooked through in center.)

Only apple pie is more “American” than these blondies! And they are the easiest baked dessert (you probably have the ingredients on hand) to make for your own family, a potluck party, or a mealtrain dessert. They aren’t “health food” per se, but at least they are homemade!
