Apple Cinnamon Mug Cake

  • 1/4 apple, finely diced
  • 1 T. butter or coconut oil
  • pinch of salt
  • 2 1/2 T. almond flour
  • 1 T. walnuts
  • 1/4 t. cinnamon
  • 1 egg
  • 1 t. maple syrup


  1. Place diced apple into mug. Top with butter or coconut oil and salt. Microwave 1 minute to melt butter and cook apples.
  2. Add almond flour, walnuts, cinnamon and egg; stir. Microwave an additional minute.
  3. Top with 1  teaspoon maple syrup and a dollop of full-fat plain Greek yogurt.
Substitute fresh whipped cream for the yogurt and it takes it from breakfast to dessert.
