
Instant Pot or Slow Cooker White Chicken Chili (Freezer Dump Meal)
A delicious, family-friendly, one-pot meal that can be ready-to-eat OR made into a freezer dump meal for you or as a gift!

Ingredients
- 3 7 oz. cans green chilis
- 1 14.5 oz can garbanzo beans
- 1 14.5 oz. can navy beans (or cannellini)
- 1/4 cup green onion, chopped
- 1 med onion, diced
- 5 cloves garlic, crushed
- 1 T. dried cilantro
- 1 t. cumin
- 1 t. oregano
- 3 T. fresh lime juice
- 2 pounds chicken breasts
- 32 oz. chicken broth
Toppings
- tortilla chips
- shredded sharp cheddar cheese
- diced avocado
- sour cream
- fresh cilantro
Instructions
- For Instant Pot: Combine all ingredients into Instant Pot. Cook on manual, high pressure for 15 minutes. Let pressure release naturally for 15 minutes. Open Instant Pot and shred chicken with two forks. Stir and serve with toppings as desired.
- For Slow Cooker: Combine all ingredients into a slow cooker. Cook on low for 7 to 8 hours. Open slow cooker and shred chicken with two forks. Stir and serve with toppings as desired.
- For Freezer Dump Meal: Combine all ingredients except chicken broth into a freezer zipper bag. Label and freeze until needed. Thaw overnight and cook as directed above for Instant Pot or Slow Cooker. Or cook from frozen: Manual, high pressure for 30 minutes and then let pressure release naturally for 15 minutes.
