Fast Fresh Salsa

  • 1/2 yellow onion, peeled
  • 5 medium-size vine-ripened tomatoes, cut in half with stems removed
  • 1 jalapeno, seeded
  • a small handful of cilantro leaves
  • 1/2 t. salt, or to taste


Combine above ingredients in high-powered blender (I used a Vitamix).

Serve with organic tortilla chips and use as a condiment on carnitas or tacos.
