2poundsshrimp
2tablespoonsolive oil
2tablespoonsmelted butter
1largelemonjuiced
2tablespoonsDijon-style mustard
1/2cupbasil leavessliced
4clovesgarliccrushed or minced
1/2teaspoonsalt
1/8 teaspoonpepperor to taste
Instructions
Thaw shrimp and peel, if necessary.
Combine marinade ingredients; add to shrimp and marinate for 30 minutes to 1 hour.
Grill on skewers over medium heat.
Notes
This shrimp is delicious served with a side of sauteed zucchini topped with parmesan cheese.It depends on where you live, but I look for seafood caught locally (or at least in waters of the USA if possible.) I also try to avoid preservatives (mainly sodium tripolyphosphate) in the frozen shrimp, but that can also be difficult to find. (For example, I've had luck with Trader Joe's, but not Whole Foods.)
