Ingredients
2 1/2lbschicken thighs, boneless
4oz.bacon, chopped
2lbs.potatoes, peeled and chopped
2 mediumonions, peeled and chopped
1t. black pepper
1t.red pepper (or to taste)
1 1/2T.salt (or to taste)
28 oz. tomatoes, crushed
32 oz. lima beans, drained
33oz.corn, drained
2 stickssalted butter
Instructions
Chop potatoes; set aside. Chop onions, set aside. Combine spices in a small bowl.
Put chicken in a large stockpot. Cover with water and bring to a boil; cook for about 15 to 20 minutes or until chicken falls apart.
Add potatoes, onions and spices. Boil for 10 minutes.
