Ingredients:
½ stick butter
1 onion, chopped
2 garlic cloves, pressed
2 slices bacon, cooked and crumbled (optional)
About 12 Roma tomatoes (or 28-ounce can of chopped tomatoes)
4 cups homemade chicken broth
1 handful fresh basil leaves
1/3 cup heavy cream, or to taste (optional)
1 teaspoon salt, or to taste
Directions:
Saute onions and garlic in butter until translucent and slightly browned. Add bacon crumbles and stir. Add chopped tomatoes and cook for about 10 minutes while stirring until tomatoes release juices. Add chicken broth and salt. Simmer about 10 minutes more. Add basil and cream. Stir. Puree with immersion blender until desired consistency. Makes about 6 cups.
